Several Individual Websites vs. Multipurpose one

What is the deterrent of having a singular website which hosts a variety of blog topics within a niche (Baby boomers)? Can you link your various landing page to the specific topic?

Having a multi-purpose website is fine but it's difficult to manage since you'll be promoting several different products and writing articles on different.

I suggest you start with one website focused on a single niche. You'll find yourself branching out to related niches over time.

I agree with Cecille on this, especially if you are just starting with affiliate marketing, it is easier and more manageable to set-up a website on a very specific niche compared to a general one. If you feel you need to broaden your niche site, you may do so over time by adding sub-topics or similar topics. You can always turn a targeted niche site into a generic and more variety website
